Blackened Fish Tacos
Ingredients:
4 (4oz) tilapia filets, cut in half
1 teaspoon blackened seasoning
1 tablespoon canola oil
4 cups shredded coleslaw mix
1/4 cup light sour cream
2 teaspoons fresh lime juice
1/8 teaspoon spicy Cajun seasoning
8 (6-inch) corn tortillas
4 slices avocado
1/4 cup fresh cilantro, chopped
Optional: 2 tablespoons finely chopped fresh jalapenos
Fresh lime wedges
Directions:
- Sprinkle tilapia filets with 1 teaspoon blackened seasoning. Place canola oil in large skillet over medium heat, brown tilapia for about 3 to 4 minutes on each side.
- While cooking tilapia, combine coleslaw mix, sour cream, lime juice, and Cajun seasoning.
- Assemble fish tacos by placing one fish filet on each corn tortilla. Top with coleslaw blend, avocado slices and cilantro. Add jalapenos, if desired. Serve with lime wedges.
