Jan Tilley’s recipe today, Autumn Apple Salad with Maple Vinaigrette, is a delicious Fall combination of apples, pecans, and feta cheese with a delightful maple syrup dressing.
Autumn Apple Salad with Maple Vinaigrette

Serves: 4
4 cups baby spinach
1 Fuji apple, sliced thinly
1 Granny Smith apple, sliced thinly
4 slices thick-cut bacon, cooked and chopped
2 ounces feta cheese crumbles
ΒΌ cup chopped pecans
3 tablespoons olive oil
3 tablespoons Dijon mustard
2 tablespoons apple cider vinegar
2 tablespoons pure maple syrup
Dash of cinnamon
Salt and pepper, to taste
Directions:
- Divide spinach onto 4 plates. Divide and artistically layer each salad with sliced apples, bacon, feta and pecans.
- In a blender, pulse together olive oil, mustard, vinegar, syrup, cinnamon and salt and pepper until well-blended.
- Drizzle dressing over each salad. Serve and enjoy immediately.
*Serving Tip: For a quick and complete meal, add shredded chicken.
