Blackened Fish Tacos

Ingredients:

4 (4oz) tilapia filets, cut in half

1 teaspoon blackened seasoning

1 tablespoon canola oil

4 cups shredded coleslaw mix

1/4 cup light sour cream

2 teaspoons fresh lime juice

1/8 teaspoon spicy Cajun seasoning

8 (6-inch) corn tortillas

4 slices avocado

1/4 cup fresh cilantro, chopped

Optional: 2 tablespoons finely chopped fresh jalapenos

Fresh lime wedges

Directions:

  1. Sprinkle tilapia filets with 1 teaspoon blackened seasoning. Place canola oil in large skillet over medium heat, brown tilapia for about 3 to 4 minutes on each side.
  2. While cooking tilapia, combine coleslaw mix, sour cream, lime juice, and Cajun seasoning.
  3. Assemble fish tacos by placing one fish filet on each corn tortilla. Top with coleslaw blend, avocado slices and cilantro. Add jalapenos, if desired. Serve with lime wedges.
